It’s a new year, so how about ditching the boring, store bought snacks wrapped in packaging and making your own! By now, you probably know that we LOVE recipes from The Minimalist Baker - which is exactly where we found this recipe for delicious Salted Caramel Cashew Bites. They are simple and quick to make, and we just so happen to carry three out of the four ingredients you’ll need - meaning you can make these snacks the low waste way.
First up, ingredients. All you need for these bites are:
- 1 cup of packed + pitted dates (preferably medjool)
- 1/3 cup of cashews
- 1/4 cup of shredded coconut (unsweetened)
- 1/4 teaspoon of sea salt
Seriously, that’s it.
After you’ve gathered your ingredients, pop them into a food processor if you have one (if not, a blender will work too, but use a low speed and pulse). Pulse it until you’ve got a dough-like consistency. Scoop and shape the mixture into balls - check out the original recipe for trouble-shooting if you’re finding they are not holding their form.
Then, all that’s left to do is enjoy! Eat ‘em right away, or pop into the fridge for up to a week, OR into the freezer for up to a month.
